[Recipe] Potato and sweet potato salad

With this recipe, sweet potatoes add a touch of sweetness to the usual potato salad with mayonnaise.
It can be served either hot or cold.

Who likes spicy taste of onion, I advise you not to cook them, but slice them, soak them in cold salted water, squeeze them and add them when you add mustard and mayonnaise at the step 9. (I prefer to cook them because raw onions give me a headache).



POTATO AND SWEET POTATO SALAD


Ingredients

Potatoes: 500g
Sweet potatoes: 300g
Frozen green beans: 200g
White onion: 200g
Olive oil: proper amount
Salt

Lemon juice: 10g (2 teaspoons)
Mayonnaise: 60g (6 tbsp)
Mustard: 30g (3 tablespoons)
Salt and Pepper

Procedure

1.

Thaw the green beans and cut into about 3-4 cm long

Stir-fry the beans in a pan with oil and a pinch of salt

Peel the sweet potatoes and cut into pieces

In a pot, begin to cook the sweet potatoes in salted water

Cut the onions into slices
Add about 3/4 of them (about 150g) to the beans and continue to cook

Peel the potatoes and cut into pieces

7.
When the sweet potatoes are starting to be a bit soft add the potatoes and continue to boil
(This is because potatoes and sweet potatoes have different cooking times)

8.
When the onions of the step 5 become transparent, add the rest of the onions and cook for about 3-4 minutes

9.
When all the ingredients are cooked, put out the heat
Add lemon juice, mustard, mayonnaise and mix them
Add salt and pepper to taste and mix all

10.
Here, it's ready !!
You can serve it hot or cold.




- Use "also" frozen / pre-cooked ingredients
- Cook with large amount even when you do need a little, so you can eat it in the following days
