[recipe] Freezer storable pancakes

Maybe I found the right recipe to prepare my perfect pancakes, which I've been trying to do for a while .
They should be soft, not too sweet, and can be stored in the freezer.

Here it is!


PANCAKE 

STORABLE IN FREEZER

Total time: 20 minutes

Ingredients for 6-7 pancakes of 20cm diameter

1 Egg
35 g of Sugar
16 g of Mayonnaise
160 g (155 ml) of Milk
Vanilla extract
130 g of 00 flour (or Pastry flour)
0.5 teaspoon of Baking powder

Method

1. In a bowl break the egg and add the sugar and mayonnaise

2. Add also the milk and the vanilla and mix well with a whisk until the sugar is fully dissolved

3. Begin to heat a pan with medium heat

4. Sift the flour and the baking powder into the bowl

5. Roughly mix all with a whip
CAUTION!! 
The batter should be neither smooth nor homogeneous.
It must have some lumps.
Otherwise, the pancakes will be thin and rubbery.

6. Check that the pan is hot enough (should be about 200°C) then lower the heat to the minimun

7. Pour the batter from high (such as 15-20 cm from the surface of the pan)
(I know. This pan is not so nice to look, like many others of my equipments. But I feel good with this to cook the pancakes)

8. When they begin to have some small holes...

9. Turn them

10. Wait 2 minutes and the pancakes are ready!


What I like is that you can eat them with toppings either sweet or savory:

Pancake con burro e zucchero alla cannella + cappuccino
with butter and cinnamon sugar

with bitter orange marmalade

with gorgonzola, mascarpone, bacon and walnuts
