Cookies for St. Giovanni Bosco's party

January 31 is dedicated to St. Giovanni Bosco.
Every year our parish organizes a party for children at the oratory that this saint is the patron.

I brought some of homemade cookies to contribute to the party.

S'more cookies
Cookies with savory peanuts*
Oatmeal cookies

*The recipe of the cookies with savory peanuts is still under experiment.
This time I did as the following:

Ingredients
100 g of Softened butter

75 g of White sugar
75 g of Light brown sugar
0.5 teaspoon of Vanilla powder
1 Egg
130 g of 00 flour  (or Pastry flour)
0.5 teaspoon of Baking powder

70 g of Oat flakes
180 g of Roasted and salted peanuts

Method

  1. With wooden spoon mount the butter until it becomes foamy
  2. Add white sugar, the light brown sugar and vanilla and mix well
  3. Add the egg and mix well
  4. Sift the flour and baking powder into the mixture and mix roughly
  5. Add the oatmeal and peanuts and mix all
  6. Make the mixture rest in refrigerator for at least half an hour
  7. Make the walnut-sized balls of dough using teaspoons and place them in a 5 cm distance between them on a baking sheet lined with parchment paper
  8. Bake them in oven at 180 ° C for 8 - 10 minutes

I hope that children liked them.
