The other day I cooked pancakes and I have eaten there a couple of them. Those I advanced I have put them in the freezer.
From what I understand, when you freeze pancakes you have to be careful of:
- to cool them a bit on a wooden board or on a grid (because the surface of them may not become wet)
- to wrap them still warm one by one with cling wrap (to keep their softness)
- to place them in the freezer immediately
- when they are frozen keep them together in an airtight bag (because they do not become dry and do not take the smell of other foods in the freezer) and put them back in the freezer

Today I tried to reheat them.

1. Put into the microwave still frozen pancake and wrapped by the film and heat at 440 W for 10 seconds (if there is only one, if they are more multiply the microwave time to the number of pancakes)
2. Heat a small skillet, reduce heat to a minimum, remove the wrap from the pancake and place it in the pan, close with a lid and wait for 5 minutes
3. Turn the pancake, re-put the lid and wait 5-7 minutes
4. At this point the pancake should be warm and soft as if it was just made
