I found this salad's recipe particularly inspiring.

It was very easy to prepare and very tasty either hot or cold.
I did not know that quinoa seeds and sweet potatoes go so well together.
Unfortunately I did not have the mangos that the original recipe calls for, but it's ok anyway.
I'm sure I'll make it again while it lasts the season of sweet potatoes 🍠
