Crispy Garlic Chips of Ryan Goodwin

The garlic chips that I "meal-prepped" yesterday is a recipe of Ryan Goodwin from Cookpad:
"Crispy Garlic Chips"



The particular point of this recipe, and that works fine, is milk.

As Ryan says in his recipe, this step where you use the milk is kinda pain, but it is essential. And I agree with him. It softens the taste of the garlic, otherwise the chips will be too bitter and biting to eat.

For reminder for who are not used to the Fahrenheit degree like me, the oil temperature 300 ° F equals approximately 150 ° C, therefore it's a low-temperature fry.

How to freeze and reheat pancakes [In search of a perfect recipe]

The other day I cooked pancakes and I have eaten there a couple of them. Those I advanced I have put them in the freezer.

From what I understand, when you freeze pancakes you have to be careful of:

  • to cool them a bit on a wooden board or on a grid (because the surface of them may not become wet)
  • to wrap them still warm one by one with cling wrap (to keep their softness)
  • to place them in the freezer immediately
  • when they are frozen keep them together in an airtight bag (because they do not become dry and do not take the smell of other foods in the freezer) and put them back in the freezer

[recipe] Tortellini in white wine broth - quick recipe

It's cold today, too. 
I was thinking to tortellini asciutti with some sauce but at the last minute I changed my mind. With broth.


White wine gives a deep touch even to a broth made with stock cube or powder like in this recipe.
(If you have some homemade broth it's just fine. I congratulate you 👍  The soup will be even more tasty.)

Another cold day

[5 minutes preparation recipe] Minestrone soup for lethargy


When it's cold the last thing you want is to get out of the blanket. And if you have to stay in the kitchen and cut various and so many ingredients into small pieces? No way! ...but that boring chore is just what you need if you want a good bowl of minestrone soup that warms up the heart. And the cooking way? With a traditional method it takes at least a minimum of one hour of slow cooking ... I'm hungry now!
The temptation to go for the instant food is strong. No, I will not stoop so low .... at least for today.

Here is a solution that guarantees a maximum result with minimum effort.
The time you have to stay up to prepare everything is just 5 minutes, then 2-3 minutes of patience for the whole thing comes to a boil... At this point, you are free again to go back to your warm and confort lair. After half an hour a nice plate of steaming soup with rich ingredients that melt in your mouth is ready..

[Recipe] Potato and sweet potato salad

With this recipe, sweet potatoes add a touch of sweetness to the usual potato salad with mayonnaise.
It can be served either hot or cold.

Who likes spicy taste of onion, I advise you not to cook them, but slice them, soak them in cold salted water, squeeze them and add them when you add mustard and mayonnaise at the step 9. (I prefer to cook them because raw onions give me a headache).

Family lunch

I cooked "Bacalà alla vicentina" for the first time. It took three days with "my original" slow cook method 😵
The fish was tender but it would have been better if I had put a bit more salt and anchovies.
The next time I'll try to cook with some hot water in the outer pan so the temperature will not be higher than 100°C.

- Mixed mushroom with onion (Very tasty! I must remember the recipe)

Also the wine was good 👍👍
